I love soups, even in the hot summer of Florida - a good soup can be heavenly. Ramen and pho are lovely with tastes of fish sauce, soy sauce and other spices. A good sancocho with rooted vegetables, large pieces of chicken and a tasty salty broth can be a near spiritual experience. Growing up, I did not appreciate a good sancocho Mami made until I was sick. Something about the spoonfuls of yucca and sweet plantain with the chicken broth would battle any cold or chill, bringing in vital nutrients into you. Before catching covid this year, I had the flu about eight years ago and that illness was bad enough that I spent a week at home, sweating and sleeping while dosing the OTC meds. The first day I was really feeling nasty, I went to the local supermarket where I picked up my needed root veggies (yucca, potatoes, corn on the cob and sweet plantain), a cut up chicken, chicken broth and meds for the aches. I made a large pan of sancocho and ate it over several days while my body fought off my illness and I swear it helped me get better.
