Wow! The last two weeks have blown by! Somehow I forgot to get a blog in. Last week was a pretty busy week, we spent the first part of the week preparing for a visitor and I also had a trip to help my sister with a craft show on the calendar. After our trip to Memphis my guy was once again not feeling well at all. His cough had came back full force and he was running low grade fevers here and there and had zero energy. We took an at home COVID test before our guest arrived just to be safe and as predicted it was negative. After a long night of restlessness and non-stop coughing I finally convinced him to go to our Urgent Care clinic on Saturday morning. His diagnosis was pretty non-existent with no testing for any illnesses. He was given two antibiotics and two cough medicines along with a steroid. We are letting these meds work their course and will determine then if we need to pursue further treatment. The cough has improved but is still sticking around. His poor little system has been thrown such a loop since our move. Hopefully he will continue to heal throughout the winter and be raring to go come Spring.
Visitors Welcome
Our visitor of the week is one of the bass singers my guy sang with in the Cleveland Orchestra Chorus for many years. He had visited us when we lived in Mountain City and had followed along on our house hunt. He was excited to visit again and check out the new house and land. He arrived late Thursday evening. I was out of town at my sisters and had left vegetable soup for the guys to enjoy during my absence. I had also left my guy with a handful of instructions that I was sure he could follow (breakfast, coffee, etc.)
I returned home Friday evening and was pleased to learn they had saved me a couple slices of their pizza! This friend is often referred to as "The Pie Man" and he did not disappoint with his pecan & pumpkin pies that he had brought for us. They were both delicious, although not on our diet plans we still enjoyed!
Fortunately, our visitor was interested in a low key, restful visit. This was right up our alley! The guys enjoyed watching football games while I did my market and caught up on my sewing projects. We also watched movies and Netflix shows during our chill time. We had one big outing day! We visited the Sycamore Schoals State Park Visitor Center and took in all the local American Revolution history.
After our visit we came home to rest before our night plan. We visited the Christmas light display at Bristol Motor Speedway and then had dinner at one of our favorite restaurants. The light show was beautiful and having the opportunity to drive on the actual speedway was pretty cool as well!
Our guest left us on Tuesday morning. We had a great visit and are making plans to stop by his house during our next Ohio trip. We have never had the opportunity to meet his wife and look forward to finally meeting her. She had sent several housewarming gifts for us including two crocheted lap afghans. They are beautiful and have become our favorite couch accessories.
What's for Dinner?
We had the stuffed green peppers I had frozen the last time I prepared them. It was a test to see if the peppers were still as good after freezing and they were! We also had our beef ribs from our 1/8 cow we have in our freezer. They were delicious!
While our guest was here I prepared my lasagna with salad and French bread. He is an Italian and my meal gained his approval so I will take that as a win!
Thanksgiving Feast
After our guest left on Tuesday, we headed right into Thanksgiving prep mode. Well, at least I did. We had informed both of our families about a month ago that we would be staying home for the holidays and enjoying our new house. We invited everyone who wanted to come here and join in on the festivities. Everyone else had their own plans as well and it ended up being the two of us and bro. Which was absolutely perfect! I prepared a turkey in the crock pot and bro had received a ham from his work that I prepared as well. We had dressing, green bean casserole, macaroni & cheese, cranberry sauce, mashed potatoes, gravy and deviled eggs. I also experimented with making homemade rolls. I would call the experiment a success. My mother-in-law used to make the most delicious homemade rolls you have ever tasted. Many a holiday meals this would be Cutler's only food on his plate and she often would prepare him his own special pan of rolls which he thought was pretty cool and would never share. I regret being so busy back then that I never took the time to spend a few minutes with her in the kitchen and learn from the master! I was too busy making sure Cutler didn't tear her house apart while waiting for dinner! I also have a new appreciation for the amount of time she spent preparing these rolls! My rolls were not quite as good as "Granny rolls" but they are a good enough substitute. The real test will come later today when Cutler arrives and tastes them for himself.
Our dinner was very good and low key and laid back ... which equals a perfect holiday in our book! We had extended couch time and enjoyed a movie together. I also started a little Christmas decorating and we now have our tree up! It's a smaller tree, but it fits its spot perfectly. I have all of my handmade ornaments displayed on it. I am wanting to go with all handmade decorations, not necessarily made by me but made by someone other than store bought.
